Prep time: 20 minutes | Cook time: 15 minutes | Yields: 6–8 servings

Ingredients

For the Cranberry-Orange Chutney

  • Fresh cranberries: 12 oz (1 bag)
  • Orange juice & zest: Zest of 1 orange, plus ¼ cup fresh juice
  • Maple syrup or honey: ½ cup
  • Shallot: 1 small, finely minced
  • Apple cider vinegar: 2 tbsp
  • Ground cinnamon: ⅛ tsp
  • Red pepper flakes: A tiny pinch (optional)

For the Green Goddess Feta Base

  • Feta cheese: 8 oz (block feta in brine preferred, drained)
  • Greek yogurt: ½ cup (plain, full-fat)
  • Fresh basil: ½ cup (packed)
  • Fresh Italian parsley: ¼ cup (packed)
  • Fresh chives: 2 tbsp (chopped)
  • Garlic: 1 plump clove, roughly chopped
  • Lemon juice: 1 tbsp (freshly squeezed)
  • Extra virgin olive oil: 2 tbsp (plus a splash extra for mellowing the garlic)
  • Salt and black pepper: To taste

For the Lightly Seasoned Pita Wedges

  • Pita bread rounds: 4 whole rounds
  • Extra virgin olive oil: 2–3 tbsp (for brushing)
  • Seasonings: dried oregano, garlic powder, salt, and freshly cracked black pepper

For the Garnish

  • Shelled pistachios: 2 tbsp, roughly chopped
  • Fresh herb leaves: A few tiny basil or oregano leaves

Instructions

Step 1: Mellow the Garlic

  1. Infuse the oil: In a small pan over low heat, warm a splash of olive oil. Add the roughly chopped garlic and simmer for just a few seconds until fragrant, being careful not to let it brown.
  2. Steep: Remove the pan from the heat entirely and let the garlic sit in the warm oil for 5 minutes. This removes the sharp, raw bite while retaining its rich flavor.

Step 2: Cook the Chutney

  1. Combine ingredients: In a small saucepan, combine the fresh cranberries, orange juice, orange zest, maple syrup (or honey), minced shallot, apple cider vinegar, and cinnamon.
  2. Simmer and break down: Bring the mixture to a gentle boil over medium heat. Reduce the heat to low and let it simmer for 10–12 minutes. Use the back of a wooden spoon to burst the cranberries and lightly mash them as they cook.
  3. Thicken: Once the cranberries have broken down, and thickened to a jammy consistency, remove the saucepan from the heat. Let the chutney cool completely to room temperature (it will continue to thicken as it cools).

Step 3: Whip the Green Goddess Base

  1. Process the base: Add the drained feta, Greek yogurt, fresh basil, parsley, chives, lemon juice, and the mellowed garlic (along with its infusing oil) to a food processor or high-powered blender.
  2. Emulsify: Pulse until a thick paste forms. With the motor running, slowly drizzle in the remaining 2 tablespoons of extra virgin olive oil. Process for 1–2 minutes until the dip is light, completely smooth, and turns a beautiful pale green color.
  3. Season: Taste the base and season with a pinch of black pepper. Add salt only if necessary, as block feta is naturally quite salty.

Step 4: Bake the Pita Wedges

  1. Prep the oven: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Cut and season: Brush both sides of the pita rounds with olive oil, then sprinkle your seasonings on both sides. Stack 3 pita rounds at a time, and cut into triangles (6 per pita).
  3. Bake for a perfect chew: Arrange the wedges in a single layer on the baking sheet. Bake for 6–8 minutes, keeping a close eye on them. Remove them just as the edges start to turn golden brown so they stay crisp on the outside but keep a soft, satisfying chew in the center.

Step 5: Assemble and Serve

  1. Plate the base: Spread the pale green goddess whipped feta into a shallow serving bowl or across a rimmed platter, using the back of a spoon to create a deep swirl in the center.
  2. Layer the chutney: Spoon the cooled cranberry-orange chutney directly into the center of the feta swirl.
  3. Garnish and present: Top the chutney with a light sprinkle of chopped pistachios for texture, along with a few fresh herb leaves. Arrange the warm pita wedges neatly around the dip and serve.

👩‍🍳 Kitchen Notes & Troubleshooting

  • If your chutney gets too thick or paste-like: Cranberries are naturally packed with pectin, meaning the chutney will continue to thicken significantly as it cools. If it over-reduces on the stove or sets too firmly in the fridge, simply stir in 1 to 2 tablespoons of warm water or orange juice over low heat to loosen it back up to a glossy, spreadable texture.
  • If your whipped feta feels a bit too stiff: The water content in block feta varies by brand. If your food processor is struggling or the base looks dense, blend in 1 tablespoon of warm water or additional Greek yogurt at a time until it becomes light, airy, and easily scoopable.
  • Achieving the perfect pale-green color: To ensure a beautiful pastel-green base, make sure your fresh herbs are completely dry after washing before adding them to the food processor. Wet herbs can cause the oil to separate slightly and dull the vibrant color.
  • Make-Ahead Hack: The cranberry-orange chutney can be made up to 5 days in advance and kept in an airtight container in the fridge. The Green Goddess feta base can be whipped 1 to 2 days ahead. Always bring the base to room temperature for 20 minutes before serving for maximum scoopability!
