Smash Burger “Secret Sauce”

Makes ~ 1 cup / enough for about 12-16 burgers

  • ½ cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 2 tablespoons finely chopped dill pickles or dill relish
  • 1 teaspoon pickle juice
  • ½ teaspoon Worcestershire sauce
  • ½ teaspoon smoked paprika
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • A few dashes of hot sauce (I like Siracha)
  • Freshly ground black pepper
  • Optional: honey, brown sugar or maple syrup to taste for more of a BBQ sauce vibe

Mix everything together and refrigerate for at least 30 minutes so the flavors blend. Sauce can be stored in the fridge for up to one week.

This recipe is very forgiving, and you can play around with different versions. For a slightly sweeter, restaurant-style sauce, add 1 teaspoon honey or brown sugar, or you could opt for sweet pickle relish. I actually sometimes omit the pickle juice, because I like to make pickled red onions as a condiment for burgers, and find they provide enough vinegar notes. I do usually make my sauce pretty spicy, but set some aside for the kids before adding Siracha to the adult version. My kid version always includes maple syrup to give it the BBQ sauce vibe that my son likes.
