Melon-Prosciutto Skewers

Sweet melon, salty prosciutto, creamy mozzarella, and fresh basil make these colorful skewers an easy summer appetizer. They’re light, refreshing, and elegant enough for entertaining.

Makes: 16 skewers
Prep time: 20 minutes

Ingredients

  • ½ medium cantaloupe
  • 8 thin slices prosciutto
  • 16 fresh mozzarella pearls
  • 16 small fresh basil leaves
  • Freshly ground black pepper
  • Balsamic glaze, optional
  • 16 small appetizer skewers or cocktail picks

Instructions

  1. Scoop the cantaloupe into balls using a melon baller, or cut it into approximately 1-inch cubes.
  2. Cut each slice of prosciutto in half lengthwise and gently fold each piece into a small bundle.
  3. Thread one piece of cantaloupe, one folded piece of prosciutto, one basil leaf, and one mozzarella pearl onto each skewer.
  4. Arrange the skewers on a serving platter and finish with freshly ground black pepper.
  5. Just before serving, drizzle lightly with balsamic glaze, if desired.

Make-Ahead Tip

Assemble the skewers up to four hours in advance. Cover and refrigerate, then add the black pepper and balsamic glaze just before serving.
